Country Comfort Coonabarabran is a property
steeped in exciting developments. Originally named "The Dutchman's Inn"
it soon had its first taste when named to the popular "The Amber Court
Motor Inn". This name became synonymous with the property in the
township of Coonabarabran. Originally built in the 1960's with only an infinitesimal six rooms, the Motel started on its blossom of change: in 1979 with the reception and restaurant being built. Yes, the Restaurant that you will dine in. Change was not to stop though. In 2005 the property had a major refurbishment. With the once small and dated 3 ½ star rooms transforming into luxurious fully refurbished executive suites, boasting a AAA rating of 4 stars. Chef Ray Neal has been in the food industry for a good 48 years starting at the wee age of 15. He has always had a passion to introduce pancakes into a restaurant scene for many years. With so many exciting and scrumptious dishes on the menu, it would be hard pressed to choose a favourite. However, Ray noted that his "What The??" dish was his personal pick of the crop. "With so many flavours you'll never know what you're going to get next" he said. Finally, in all his years of commercial cookery many people have asked for his famous pumpkin soup recipe. Now that he is moving away from the world of a la carte, it was asked if he would be able to let us in on a secret. It was with much anticipation that we awaited the answer.
